Cranberry Apple Crisp

  • bottom layer:
    • 6 apples
    • 12 oz. fresh cranberries
    • 1 cup apple cider
    • 3/4 cup maple syrup
  • top layer
    • 1 stick butter
    • 1/2 cup molasses
    • 1 1/2 cups oatmeal
    • 1/2 tsp nutmeg
    • 1 tsp cinnamon

Preheat the oven to 350° and use a pan that is 8x10x4 in deep.
Pare, core, and slice the apples. Put them in the pan.
Boil the cider, maple syrup and cranberries in a saucepan, then simmer for 5 minutes until the cranberries have popped open.
Pour the cranberry mixture over the apples.
Melt the butter and add the molasses. Stir in the oatmeal, nutmeg and cinnamon until the oatmeal is evenly coated.
Spread the oatmeal mixture on top of the cranberry-apple mix.
Bake for 90 minutes or until the apples are soft and the topping is firm.
